Produce is a general term that refers to fruits and vegetables produced on a farm, which are sold to the public in their fresh, uncooked state. In the retail environment, produce is often separated into three categories: vegetables, fruits, and herbs. Vegetables are further segmented into cooking vegetables, and salad vegetables. Cooking vegetables include broccoli & cauliflower, asparagus, onions, leeks & garlic, potatoes, peas, beans, corn, and squash. Salad vegetables include lettuce, cucumbers, tomatoes, celery, carrots, and mushrooms. Common fruits found in the produce department include apples, pears, oranges, grapes, melons, peaches and plums. Fresh herbs are also carried in the produce department, and include basil, sage, rosemary, parsley, and oregano.
